Baileys® Irish Cream Cake

Made with Baileys® Irish Cream and KerryGold® Butter, this cake is wonderfully light and happily delicious!

Equipment

  • Large mixing bowl
  • 2 9-inch cake pans or 1 13x9-in cake pan
  • Electric mixer (optional)
  • measuring cups and measuring spoons

Ingredients

  • 2 C granulated sugar
  • 2 ½ C all purpose flour
  • 1 ½ tsp baking soda
  • 1 ½ tsp baking powder
  • 1 tsp salt
  • 2 eggs room temperature
  • ½ C milk room temperature
  • ½ C Baileys® Irish Cream room temperature
  • ½ C vegetable oil
  • ½ C KerryGold® Butter room temperature
  • 2 TBSP vanilla extract
  • 1 C boiling water

Icing

  • 1 C KerryGold® Butter room temperature
  • 4 C powdered sugar
  • ¼ C Baileys® Irish Cream
  • 1 tsp vanilla extract
  • 1-3 TBSP milk room temperature, added 1 TEASpoon at a time

Instructions

  • Preheat oven to 350* F.

Cake

  • Sift together/mix all dry ingredients (first 5 ingredients).
  • In a separate bowl, mix together the next 6 room temperature 'wet' ingredients. (DO NOT add the boiling water yet.)
  • Add the 'wet' ingredients to the dry ingredients and mix for at least 2 minutes.
  • Add the boiling water now.
  • Pour batter into prepared pan/s and bake at 350* F for 30 minutes or until knife or toothpick inserted in center of cake comes out clean of batter.
  • Remove from oven and allow to cool completely so the icing will not melt off from the heat.

Icing

  • Blend first four (4) ingredients and add milk one (1) teaspoon at a time until you reach the consistency you want for frosting.
  • Ice the cake.
