Irish Toast

“Irish” toast is a fun version of the classic breakfast food, French toast – made even more incredible with the addition of your favorite boxed cake mix! Try it. Play with the amounts of milk : egg : cake mix ratios until you hear yourself and your family audibly sigh with the first bite.

Irish toast is a great choice to start a special day or holiday in the biggest of ways! The gang will love it.

Equipment

  • Mixing bowl
  • Whisk or spoon
  • Griddle or any flat cooking pan
  • Spatula

Ingredients

  • Thick slices of bread (as many as needed per person)

Batter

  • Any box cake mix you enjoy (...like vanilla, spice, carrot cake, chocolate, etc...)
  • Eggs (...number of eggs used varies to the number of toasts you are making and your personal preferences for batter.)
  • Milk (...same as above for "eggs")

Extras for Serving

  • Powdered sugar optional
  • Maple syrup optional
  • Fruit jam or preserves optional
  • Sliced fruit optional
  • Whipped cream optional
  • Chocolate Chips optional

Instructions

  • Tip: Lay out bread slices the night before you make this breakfast. (Lightly stale bread seems to hold the egg batter better than fresh bread, but both will work.)

Batter

  • (This part you will have to play by personal taste - yours and / or that of your hungry crew.)
  • Mix together a cupful of dried cake batter straight from the package, 2 eggs, and enough milk to make the batter a consistency that is not "too thick" nor "too runny". (Think the consistency of a pancake batter.)
  • You can add cake mix and/or eggs and/or milk to suit the number of servings you are making.

Frying

  • Heat griddle or frying pan.
  • Dip bread slices into batter to coat both sides and lay it flat in pan. (Continue to add battered bread slices to use full surface area of pan and decrease your overall cooking time.)
  • Cook each slice until golden brown on pan-side. Flip to cook other side.
  • Remove from pan when both sides of bread slice are golden brown.
  • Sprinkle with powdered sugar, if desired.
  • Serve hot with a side of maple syrup, your favorite fruit, jam, whip cream, or chocolate chips. ...or mix and match any of the above to create your perfect Irish Toast breakfast.
