Lamb Stew, a Traditional Irish Recipe

When the winter winds blow in cold and wet off the Atlantic Ocean, little can be more welcoming than a steaming hot bowl of lamb stew made in the traditional Irish manner. The Irish know best how to combine their on-hand ingredients – lamb stew meat and root vegetables with savory spices, broth, and a wee touch of wine – and leave it to simmer slowly all day while they’re in the fields, the store, or the office working. This dish is hot and ready when they return home with every vegetable and lamb chunk wonderfully tender and the broth seasoned to the perfect gravy.

The aroma alone of this slow-cooked crockpot-of-love will have you rushing out of your coat, hat, scarves, and gloves!  …just add a side basket of crusty bread and you’re ready to enjoy Ireland’s most beloved comfort food.

Traditional Irish Lamb Stew

  • Crockpot
  • Mixing bowl
  • Frying pan
  • Slotted spoon


  • 5 lb Leg of lamb cut into chunky pieces

Flour Mixture

  • 1/2 - 1 cup Flour
  • 2 tsp Salt
  • 2 tsp Pepper or more, to taste

Stew Vegees - coarsely chopped in amounts that will fit in your crockpot and to your taste preferences for combination

  • 1-2 Onions
  • 3 cloves Garlic minced
  • Potatoes
  • Carrots

Stew Broth

  • 5 cups Beef stock
  • 1 cup White wine
  • 1 tsp Thyme, dried
  • 1 Bay leaf

Irish Group Travel Secret Ingredient...

  • 2 Wine corks


  • 1 bunch Parsley chopped/torn


  • Mix flour, salt and pepper. Toss lamb chunks with flour mixture until lamb pieces are coated on all sides. Set aside.
  • Add vegetable oil/bacon drippings and coarsely chopped onion and minced garlic cloves to frying pan over medium to low heat. (If spitting/spattering occurs from oil being too hot, reduce heat.)
  • Saute' onion and garlic until onion pieces are clear.
  • Remove onion and garlic with a slotted spoon to waiting crock pot. 
  • Add lamb chunks to pan of heated vegetable oil/bacon drippings. Brown meat on all sides.
  • Remove crispy browned meat with slotted spoon to a plate covered with a paper towel to drain.
  • Add drained meat chunks to crock pot.
  • Add potatoes and carrots to crock pot.
  • Add beef stock, dried thyme, bay leaf, and white wine to crock pot.
  • Float 2 wine corks in crock pot - an Irish Group Travel secret believed to help tenderize the stew meat.
  • Cook in crock pot on low for 6-8 hours or until meat is fork tender.
  • Serve hot in bowls garnished with a sprinkle of fresh parsley across the top and a side of crusty bread.
